Use this product with wet chicken for a very thin and tasty coating, smaller pieces of chicken take about 2 grams to coat and offer about 4% of the daily allowance for sodium. Egg and milk hold slightly more coating and increase the coating count to about 4 grams and 8% of the daily allowance for sodium. Butter milk is for those who like a lot of crust on their chicken, buttermilk tends to thicken when chicken is soaked in it. Most folks don't know that there is an enzyme in buttermilk that breaks down chicken fibers to make the chicken more tender. Using buttermilk increases the amount of coating and may add up to 1/4 inch of crust to fried chicken.
